Strawberry Banana Yoghurt Clusters (Printer Friendly)

Creamy Greek yogurt meets freeze-dried strawberries and banana chips in these frozen bites.

# What You Need:

→ Yogurt Base

01 - 1 cup plain Greek yogurt, full-fat
02 - ½ cup strawberry-flavored yogurt
03 - 1 tablespoon honey or maple syrup
04 - ½ teaspoon vanilla extract
05 - Pinch of salt

→ Fruit Mix-ins

06 - ¾ cup freeze-dried strawberries, roughly crushed
07 - ¾ cup freeze-dried banana chips, coarsely chopped

→ Toppings

08 - 2 tablespoons freeze-dried strawberries, reserved
09 - 2 tablespoons freeze-dried banana chips, reserved

# How to Make It:

01 - Line a baking sheet with parchment paper for easy cluster removal and storage.
02 - In a medium mixing bowl, combine plain Greek yogurt, honey or maple syrup, vanilla extract, and salt. Stir until smooth and well combined.
03 - Divide the yogurt mixture equally between two separate bowls for marbling.
04 - Add strawberry-flavored yogurt to one bowl and gently fold to create a streaked marbled effect without fully blending.
05 - Fold half of the freeze-dried strawberries and banana chips into each bowl, reserving 2 tablespoons of each fruit for topping. Stir gently to maintain fruit piece integrity.
06 - Using two spoons, drop heaped spoonfuls of yogurt mixture onto the prepared tray, spacing clusters approximately 1 inch apart. Use strawberry-swirl mixture on one side and banana mixture on the other.
07 - Sprinkle reserved freeze-dried strawberries and banana chips on top of each cluster, pressing gently to ensure adherence.
08 - Place tray in freezer for at least 2 hours until clusters are completely firm and solid.
09 - Once frozen solid, transfer clusters to an airtight container or resealable freezer bag, placing parchment paper between layers to prevent sticking. Store in freezer for up to 2 weeks.
10 - Remove clusters from freezer and allow to sit at room temperature for 2 to 3 minutes before serving for optimal texture.

# Expert Tips:

01 -
  • They taste like a splurge but come together in minutes with no oven or fancy equipment.
  • The freeze-dried fruit stays crunchy even after freezing, giving you texture in every bite.
  • You can grab one straight from the freezer for a quick breakfast or a guilt-free late-night snack.
  • Kids love the marbled swirl and the fun of popping them straight into their mouths.
02 -
  • Do not overmix the strawberry swirl or you will lose that marbled effect and end up with plain pink yogurt.
  • If your freeze-dried fruit is too fine, the clusters will taste dusty instead of crunchy, so keep the pieces coarse and chunky.
  • Make sure your tray is level in the freezer or the clusters will freeze lopsided and roll off your spoon when you try to store them.
03 -
  • Use a small cookie scoop to make uniform clusters that freeze evenly and look store-bought.
  • Drizzle melted dark chocolate over frozen clusters and refreeze for a grown-up dessert twist.
  • Add a pinch of cinnamon or cardamom to the yogurt base for a warm, unexpected flavor that pairs beautifully with banana.
