# Expert Tips:

01 -
  • It comes together in under an hour and practically begs to be meal prepped for the entire week.
  • The dressing is so good you'll want to pour it on everything, and the whole bowl feels like comfort food that actually nourishes you.
02 -
  • Pat your chickpeas completely dry before roasting or they'll release steam and stay soft—this single step is what separates crispy from disappointing.
  • The chipotle tahini dressing thickens as it sits, so make it thinner than you think you want it, because by the time you're ready to eat, it'll be perfect.
03 -
  • If you want extra crunch, roast the chickpeas separately on a different shelf with smoked paprika and cumin for a more pronounced spice profile.
  • Use this as your template for any bowl situation—swap the vegetables, change the dressing, adjust the base—and it still works beautifully every single time.
