# How to Make It:
01 - Cook bacon or sausage in a skillet over medium heat until browned and cooked through. Remove and drain on paper towels, then chop into bite-sized pieces.
02 - Add 1 tablespoon oil to the same skillet. Sauté potatoes, onion, and bell pepper with salt, pepper, and smoked paprika until golden and tender, approximately 10 minutes. Set aside.
03 - Whisk eggs with milk, salt, and pepper in a bowl. Heat remaining oil in a non-stick pan, pour in the eggs, and gently scramble until just set but still creamy.
04 - Heat tortillas in a dry pan or microwave for 20 seconds until pliable and warm.
